"The purpose of this master thesis will be to make an analysis and evaluation of the current alternatives to animal product consumption, and to assess their potential of transforming the food industry away from animal exploitation. The first part of the project will focus on describing the various impacts of the animal food industry, the currents state of anima consumption and consumers’ aspirations regarding their consumption behaviours for the coming years. Then, the research will focus on evaluating six alternatives to animal products along the dimensions of attractivity and feasibility. The case studies will include plant-based meat analogues with and without heme iron, fermentation-based meat alternatives, cultured or cell-based meat, dairy and egg alternatives. They will be exhaustively assessed along the criteria of environmental, health and ethical impacts, taste and appearance, financial feasibility, regulation, and product life cycle, relying on a broad variety of secondary sources."
